500g chicken, cleaned and cut into pieces

2 tomatoes, finely chopped

3-4 green chillies, slit

they turn golden brown and fragrant.

Add Aromatics:

Next, add the slit green chillies and curry leaves to the pan and sauté for a minute to release their flavours.

Cook Chicken:

Now, add the marinated chicken pieces to the pan and mix well with the onions and spices. Cook for about 5-7 minutes

 until the chicken starts to brown slightly.

Add Tomatoes:

Add the chopped tomatoes to the pan and stir to combine. Cook for another 5 minutes until the tomatoes soften and 

begin to break down.

Simmer with Coconut Milk:

Pour in the coconut milk and stir everything together. Allow the curry to simmer gently for 15-20 minutes, stirring

 occasionally, until the chicken is cooked through and the curry has thickened to your desired consistency.

Adjust Seasoning:

Taste the curry and adjust the seasoning according to your preference. You can add more salt or Chicken Masala for
